Luscious lamb chops with Spanish inspiration
THE BEST lamb I have ever eaten was not, I am sorry to report, a Pacific Northwest product, nor was it imported from New Zealand, where most lamb seems to come from these days.
This lamb came from the Finca Montealegre, a 600-year-old estate in Villatobas, near Toledo in the Castilla La Mancha region of Spain, and it was served within a few hundred yards of the spot where it had recently grazed.
The owner of the estate is a widow who, in order to maintain the family's holdings, converted the place into a reception center. With the help of a large staff and an army of local caterers, florists and musicians, she hosts weddings most of the year. But, along with a small group of like-minded travelers, I was there on a day when no events were scheduled and the agenda involved all of us getting our hands on the foods of the region.
We arrived at around 11 a.m., and after a brief tour of the place — a dead ringer for the castle in Disney's "Beauty and the Beast" — complete with ballroom and trophy room, we were led to the kitchen in a building separated from the main house by an open courtyard. As we filed in, uniformed workers were delivering sheeps' milk, Manchegan lamb and pounds of fresh chorizo made from pigs raised on the estate, the same pigs whose legs were converted into Jamon Iberico.
